Lomito of Iberian pig Bellota (Pata Negra)
Pata Negra Lomito is the spicy version of the Iberian Bellota ham. Made from Iberian pigs reared in the Extremadura region and fed on acorns (bellota in Spanish), it is made from the 'presa', a very creamy part of the fillet of pork, and macerated with paprika. You can serve it as an aperitif, on a cold plate or in a salad.
