The egg in many forms
Fish roe can be found in many different forms. Bottarga can be sliced and enjoyed on top of buttered toast or grated to season a risotto. Smoked cod roe, known as Maviar 1950, can be enjoyed just like tarama thanks to its creaminess or you can opt to grind Fleur de Maviar (dried cod roe), a Petrossian innovation.
