Uncle Ilya's chocolate and candied ginger truffles

Prepare delicious festive truffles, enhanced by the delicate fusion of dark baking chocolate, Uncle Ilya's infusion, and candied ginger. These gourmet bites reveal a melt-in-your-mouth texture, combining thick cream and butter with an exotic touch of ginger. Sprinkled with cocoa powder and delicately enhanced with fleur de sel, these truffles offer a refined tasting experience, perfect for gifting or enjoying with a cup of tea.

 

Preparation time: 1 hour • Cooking time: 10 minutes • Resting time: 10 minutes

For about 40 truffles

 

Method

  1. Chop the chocolate and place it in a bowl.
  2. Finely chop the candied ginger.
  3. Heat the cream to a boil with Uncle Ilya's infusion, leave to rest for 5 minutes, then strain.
  4. Heat again before pouring over the chopped chocolate in three parts, mix well, then add the butter, mix, and add the ginger.
  5. Mix again and refrigerate until the ganache sets.
  6. Take a teaspoon of ganache, form a ball, and place it on a sheet of parchment paper.
  7. Roll in cocoa powder.
  8. Serve with a cup of tea or an infusion.
