Prepare a healthy and flavourful plate with this delightful recipe for Caucasian-style Khabarovski® smoked trout, complemented by a refreshing fennel and orange salad and tarragon-infused sour cream.

Method
- Wash the fennel and the green apple.
- On a clean cutting board, segment the oranges, removing the peel, collect the juice in a bowl, and squeeze the remaining orange to extract as much juice as possible.
- Finely slice the fennel using a mandoline.
- Cut the apple into quarters, remove the core, and slice it thinly.
- Mix the orange juice with olive oil, season with salt and pepper.
- Combine the fennel with the oranges and green apple, season with salt and pepper.
- Chop the tarragon and mix it with the sour cream. Season lightly with salt.
- Serve the fennel salad on four plates, place a slice of Khabarovski® Trout on each one, and add a spoonful of tarragon sour cream.
