Lemon & ginger shortbread

For Valentine's Day, make aphrodisiac biscuits with lemon and candied ginger slices. Both sweet and slightly spicy, these shortbread biscuits will ravish sweet toothers palate.

 

Preparation time: 10 minutes • Cooking time: 12 minutes • Resting time: 3 hours

Ingredients for approx. 40 shortbread biscuits

 

  • 150g soft butter
  • 160g sugar
  • 1 large egg
  • 250g flour
  • 80g candied ginger slices
  • 2 pinches of salt
  • 1 yellow lemon

 

Method

  1. Cut the strips of candied ginger into small cubes.
  2. Wash, dry and remove fine lemon zests.
  3. Whip the butter with sugar for 2 minutes.
  4. Add the egg and whisk again.
  5. Add both flour and salt.
  6. Work the dough until it is homogeneous and add both ginger and zest. Mix again.
  7. Shape the dough into a ball, flatten it with a rolling pin between two sheets of baking parchment to a thickness of 2-3 mm, put in the fridge for 3 hours.
  8. Pre-heat the oven to 160°C.
  9. Roll out the dough, cut out shapes using heart-shaped biscuit cutters and place the biscuits on a baking tray covered with baking paper.
  10. Bake for 10 to 12 minutes.
  11. Remove from the oven and leave to cool.
  12. Store in an airtight tin or metal box.
